Seared Sesame Tuna Rice Bowl

Earlier this week, my dad’s friend generously gave us some of the tuna that he caught that afternoon. I’m usually not the biggest fish fan… until now. There is nothing better than freshly caught fish with local produce. As with any of my recipes, feel free to substitute any vegetables with your favorite seasonal produce.

This recipe depends on the quality of the fish. Use sushi grade yellowfin tuna, as we are only searing the outside.

The sesame seed crust adds a nice nutty flavor, some color contrast, and texture. I add sugar to help with caramelization.

I served the tuna with sticky white rice, English cucumbers, carrots, and broccoli. Feel free to add your favorite vegetables or whichever vegetables are in season. The dressing ties the whole thing together. Additional sesame seeds and green onions for garnish add a nice freshness and texture.

Ingredients

  • Tuna
  • 1 lb yellowfin tuna fillets

  • 2 tbsp sesame oil

  • 2 tbsp soy sauce

  • 4 tbsp black sesame seeds

  • 4 tbsp white sesame seeds

  • 1 tsp pink Himalayan salt

  • 1 tsp garlic powder

  • 2 tsp sugar

  • 2 tbsp grapeseed oil

  • Bowl
  • cooked rice

  • 1 broccoli head, cut into florets

  • 1 carrot, peeled and cut into strips using peeler

  • 1 english cucumber

  • Dressing
  • 2 tbsp soy sauce

  • 3 tbsp maple syrup

  • 2 tbsp gochujang

  • 2 tbsp rice vinegar

  • juice of 1 lime

  • 2 cloves garlic, grated

  • 1 inch ginger, grated

  • 1 bunch green onions

Directions

  • Tuna
  • Pat tuna fillets dry with a paper towel. Place on a plate or 9×13 baking dish and drizzle sesame oil and soy sauce.
  • Combine sesame seeds, garlic powder, salt, and sugar in a small bowl.
  • Spoon sesame seed mixture over both sides.
  • Preheat large nonstick frying pan with grapeseed oil over high heat for at least 5 minutes.
  • Add fish, flipping every 30-45 seconds, or until sesame crust is golden brown and the middle of the fillet is still pink.
  • Let rest 10 minutes before slicing against the grain.
  • Bowl
  • Blanch broccoli by boiling for 2 minutes, and transferring immediately to an ice bath.
  • Combine all dressing ingredients in medium mixing bowl.
  • Arrange tuna and vegetables around rice and spoon over dressing. Top with green onion and basil.

Notes

  • Use which ever fresh, seasonal vegetables you want!
